WHITE PEPPER

Origin

White peppercorns are from the same plant as black peppercorns but with the pericarp removed. The inside is what is referred to as the “heart” – a smooth, white center.

Whole peppercorns and ground peppercorns.

How to Store

Buy whole berries and store in an airtight container in a cool, dry place.

Taste

Milder than Black Pepper but can be sharp and hot.

Use immediately after grinding at the end of cooking for maximum flavor. White peppercorns are extremely popular in European/Italian cooking because of their use in white sauces.

White peppercorns are considered a gourmet spice due to the arduous task of removing the pericarp. White Pepper is more expensive than Black Pepper due to higher labour costs associated with harvesting.

CRISTA QUALITY CONTROL TIP:

Spices should ideally be stored between 10 and 15 degrees Celsius. Under ideal conditions, ground spices will keep for 1 year and whole spices for 1 to 2 years. Tightly close the container immediately after use and return it to a cold storage space as soon as possible.
