Origin

Cassia and Cinnamon belong to the same botanical family (Cinnamomum Verum). Cassia is the dried bark of a species of a laurel tree native to Assam and Northern Burma whereas Cinnamon comes from the inner bark of a fast growing evergreen tree which is native mainly to Sri Lanka and India.

Brown rolled barks, quills of dried bark or ground.

How to Store

Store in an airtight container in a cool, dry place.

Taste

Pungent, slightly sweet taste. Presence of eugenol in the essential oil distinguishes Cinnamon from Cassia, giving Cinnamon a note of Clove.

The paler the colour of ground Cinnamon, the better the quality. Buy Cinnamon sticks and store in a cool, dry container for longevity. Cinnamon works like magic with chocolate, apples, bananas and pears in particular.

The United States of America and Europe widely prefer Cassia to Cinnamon due to the sweeter taste. Pure Cinnamon is very costly as compared with Cassia owning to the intensive labour during harvesting.

CRISTA QUALITY CONTROL TIP:

Spices should ideally be stored between 10 and 15 degrees Celsius. Under ideal conditions, ground spices will keep for a year and whole spices for 1 to 2 years. Tightly close the container immediately after use and return it to a cold storage space as soon as possible.
