BLACK PEPPER : THE KING OF SPICES

Origin

Black Pepper comes from dried, unripened berry clusters from a perennial vine. Vietnam is the major producer of pepper in the world followed by India.

Forms

Whole peppercorns, crushed pepper and ground pepper.

How to Store

Buy whole berries and grind in a pepper mill or crush in a mortar as needed. Store in an airtight container in a cool, dry place.

Taste

Hot and biting with a clean and penetrating aftertaste.

Crista Tips

Watch out for a very shiny patina (outer surface) – this could be a sign of excess oil which can be harmful for you. Use immediately after grinding at the end of cooking for maximum flavor.

CRISTA QUALITY CONTROL TIP:

Spices should ideally be stored between 10 and 15 degrees Celsius. Under ideal conditions, ground spices will keep for a year and whole spices for 1 to 2 years. Tightly close the container immediately after use and return it to a cold storage space as soon as possible.
